Pork Tacos


  • 1 4 to 5 lbs bone in pork shoulder
  • 3 tbs chili powder
  • 1 large onion, cut into wedges
  • 3 cups root beer
  • 2 to 3 teas canned adobo sauce
  • 24 tortillas
  • shredded red cabbage
  • shredded cheddar cheese
  • 1 avocado, sliced
  • sour cream
  • salsa
Sprinkle pork with chili powder,salt, and pepper. Using your hands, rub the spices into the meat. Place meat in a 6 quart slow cooker and tuck onion wedges around the meat. Combine root beer and adobo sauce in a small bowl and pour over the pork shoulder.  Cover and cook on low for 8 to 10 hours, or until the meat shreds easily with a fork.
Transfer meat to a cutting board and let cool slightly. Use two forks to pull the meat apart into coarse shreds, discarding any fat; return the shredded pork to the slow cooker. 
To serve, put the pork into a tortilla and top with cabbage, cheese, avocado slices, sour cream and salsa.
